What do you think that means? Where did you see her change based on the situation?

Every time she was with the King, she became what he wanted her to be. She was never able to be open and honest with him or with many in the court. She was what they expected of her and only herself in the privacy of her own room. So, she changed - like a chameleon - in accordance with her surroundings.

Well said. Life is precarious as queen. Outwardly, Katherine must act, think, and say certain things. Inwardly, all thoughts are different. The queen acts one way with the king and another way with friends

He likens her to a chameleon because a chameleon changes based on the environment it is in. Katherine had to do the same, when she was with Henry as his wife she had to be completely unlike herself, meek and mild. The true Katherine only came out amongst Huicke, Dot and her true friends at court like Cat Brandon.
